That's because of its unique combination of meat, collagen and fat, which makes it irresistible

This my version of an Italian classic, more specifically a Roman classic. 

History
Coda alla vaccinara was born in the working-class quarters of Rome, where butchers turned humble oxtail into something extraordinary.
Slow hours of simmering melt the collagen into a rich, sticky sauce—deep, savory, and built on patience.
